Vegan Pumpkin Muffins

Though it is still technically summer, I can already feel that fall is in the air. Yes, it is still hot, but nights have become cooler and the sun goes down earlier, and the kids are back to school. This is usually such an emotionally trying time for me because this season transition is so hard! We go from nice warm weather, early morning swims, and late evening walks to cooler weather, no more swims and evenings inside. However, the redeeming factors of fall are the gorgeous leaves and the delicious warm foods from the last crops of the garden. AND PUMPKIN! I'm talking pumpkin everything, lattes, soups, pies, and MUFFINS. So, this muffin is fall's peace offering to me. Enjoy!


Enjoy these in the morning with a nice hot cup of tea or coffee and the paper or a book. Or grab these as a quick bite on your break at work-either way you'll love them.
