Vegan Sweet Potato & Black Bean Burrito

Several years ago my mom made me a sweet potato and black bean burrito and it was amazing! I had honestly never thought about putting sweet potatoes in a burrito before and my eyes were opened. Ever since then they have been a bit of a staple at my house (it is one of those foods that I crave).
In case you haven't heard, sweet potatoes are also really good for you! They are full of vitamins A, B, C, and E, as well as potassium and magnesium. Now on to the recipe!
