Vegan Crockpot Sweet Potato Chili & Corn Bread

It is getting to be that time of year again...soups and stews will soon become a regular menu item. We are not quite there yet though, so Steven and I just grabbed our steaming bowls of hot chili and cornbread and sat in front of the air conditioner-it works. Chili always seems to be the one dish that I make differently every time I make it-I decided this time to write it down for all of you! Enjoy!



This makes approx. 4-6 servings



We topped our with some leftover vegan cheese from our Vegan Cheese Taste Test video-super yummy!



And of course no chili is complete without cornbread! My favorite types of cornbread are the sweet ones that taste like cake! Funny enough, corn bread, like chili, is one of those things that I never make the same way twice. This one got a thumbs up from Steven so it is worth sharing. 

**Note** This make a huge thing of cornbread-like cake size, so if you are making it for just yourself or you and someone else who aren't corn bread fanatics, then I would suggest cutting the recipe in half.
