Juice Pulp: Meatballs


In addition to my yummy little pear tarts, because as I wrote in my last post I have a TON of juice pulp, I made some really delicious "meatballs" or for those of you who don't like quotations around the names of your food (like my husband...love you babe!): Veggie balls. This recipe was a great way to use up some of that good fibrous veggie pulp because it was already finely grated and ready to receive a seasoning and baking makeover. I also have to say that it really makes me feel good to be able to use all parts of my vegetables in such a practical way.
