Vegan Tzatziki Sauce

I do not even remember the first time that I had Tzatziki sauce. It is possible that it was on my first lunch "date" with the man who is now my husband. He asked me if I wanted to try a Gyro at a local Greek restaurant, and as a 16 year old who had never been on a date before, I of course said yes. That same little Greek hole in the wall was where he also proposed several years later. Having said that, Greek food has a special place in my heart, but as a vegan, it usually doesn't have a place in my stomach. BUT after a little bit of research I have created my own vegan version and boy does it taste good-especially on some vegan falafel!
