Vegan Falafel

This recipe is one of the recipes that will be featured on my 30 Day Vegan Challenge and let me tell you-it is a great place to start! Falafel is one of the best things you can find to eat in the Middle East. When Steven and I went traveling in November of 2014 we made stops in Israel and Greece and boy did I eat a lot of delicious falafel! This is my recreation with some vegan tzatziki sauce.







To serve you can put them inside your favorite bread (we used gluten free bagels), on top of a salad, on top of rice, or even just plain! I also highly recommend some vegan tzatziki sauce!
