Vegan White Bean and Kale Soup


I love soups, especially in the fall! I mentioned in another post that we were in Chicago a couple weeks ago and one of the places we went was the Chicago Diner. I got a veggie sandwich which inspired my veggie sandwich recipe and a white bean and kale soup which inspired this recipe! I think it was probably the first time I had ever had a bean and kale soup and it was a very pleasant experience that I am excited to continue to enjoy! PLUS it is another super simple recipe that is hearty and full of great flavors.


This would go great with a side salad or nice big hunk of crusty bread or both!
