Earlier this year I took an amazing trip to Ireland with Steven, my brother, and my cousin. We went in January and it was surprisingly green! I mean I know that Ireland is known for being green, yada yada, BUT it was REALLY green even though it was winter. I left desperately wanting to go back and even live there because the people are so incredibly kind and the every bit of the country is gorgeous. However, I can't say that their staple foods are especially vegan friendly. While on the trip I ate a ton of bread that I bought at a grocery store along with some tomato, avocado and pickle. As far as eating out I think I had non menu food specially made for me at every place we went. Meanwhile everyone else was stuffing their faces with bangers and mash, lamb stew, and shepherds pie! Well, so as not to leave my little vegan taste buds out, I have created my own version of shepherds pie and yes, we ate the entire thing in one sitting.
