When Steven and I first got married we had no money and a lot of shelf foods like canned tuna, canned vegetables, boxes of pasta, boxes of rice, and boxes of pancake mix! Our favorite thing to do was make an entire box of pancake mix for each of us and then make ourselves two giant pancakes. Yeah, it was pretty great, however it probably wasn't the healthiest boxed pancake mix in the world and we used fake maple syrup...so...yeah. These pancakes on the other hand are nutritious and delicious (and vegan of course)! The cocoa powder by itself in the pancakes doesn't pop through super strong, but when you cover it in pure maple syrup and coconut whipped cream, you are pretty much eating dessert!
