Growing up I was always the tuna girl. Forget the lunch meat, bring on the tuna! Tuna and crackers, tuna sandwich, tuna and vegetables, ect. Needless to say, I loved tuna. Steven and I visited a restaurant in Lancaster, PA called The Seed which brought back that tuna love with their "chickpea of the sea" sandwich. It was basically their idea of tuna, drowned in vegan mayo and vegan cheese on top of sour dough bread. It was amazing. This is my recreation with a twist: chipotle mayo (vegan of course)! It adds a really tasty creamy flavor that just melts in your mouth.
