A couple years ago when Steven and I went to Greece our hostess made this amazing spanakopita which is a greek spinach pie. She modified it so that I could eat it using potatoes and who knows what else, but it was amazing! I remember we were going to a concert that night and she said that dinner would be ready when we got back......at 11pm.....I was sad because I knew I would not be eating that late, but I really wanted to try this dish! Luckily she sent some with us on our flight and Steven and I sat in the airport smashing it in because it was sooooooo good! I created this version from that idea, but it is made with a potato crust and a warm mushroom/tofu filling-delish!
