Raw Vegan Matcha Mint Chip Ice Cream

There is something incredibly exciting about celebrating a holiday even if it has nothing to do with you. Holidays are celebrations that break cultural barriers and bring people together and it's special to see people dressed up in green and drinking shamrock shakes even when half of the people who do it aren't Irish. Matcha Mint Chip Ice Cream


This is a delicious alternative to the traditional mint chip ice cream. It is low fat, raw, and vegan! Nothing processed or unnatural about it. Hello yum, and hello St. Patties day. Enjoy!

Ingredients:
For ice cream:
-4 frozen banana's
-1/2 cup coconut/almond milk
-1/4 tsp peppermint extract
-1 tbs matcha green tea powder

For the chocolate chips:
-6 soaked dates
-1 tbs cocoa powder
-small amount of water to help it blend

Directions:
For the ice cream:
1) Blend all the ingredients together until it is smooth and creamy.

For the chocolate chips:
1. Blend the ingredients together until smooth. 2. Dab little dots of the mixture onto a piece of wax paper. 3. Put in the freezer for 15 minutes to harden. 4)Take of the freezer and sprinkle on top of your ice cream! 5. Enjoy.
