Herbed Rutabaga Mashed Potatoes

Rutabaga's are a really interesting food that are somewhere between a cabbage and a turnip. They can be mashed like potatoes, but are twice as flavorful. A couple weeks ago I found a whole bunch of them being sold for $0.10 a piece so I figured hey, lets go for it. These poor little things went through a lot before they finally made it into this lovely dish you see below. I bought them, put them in the car, put them in my parents house, back in the car, to our house, into the fridge and finally into a pot. Whew! Show your appreciation for these hearty little vegetables by making this recipe.

I've created this blog to document the different recipes I've created as well as share with you a peek into a Vegan lifestyle and the benefits that come with it. I started on the Vegan diet in October of 2012 and my life was immediately transformed! Before I started on the diet I was often very tired and consistently got sick every month. As soon as I changed my diet I became energized, stopped getting sick, and felt great! I want you to be able to experience the transformation that I felt or even just enjoy incorporating these nutrient rich foods into you normal diet.
