Rutabaga's are a really interesting food that are somewhere between a cabbage and a turnip. They can be mashed like potatoes, but are twice as flavorful. A couple weeks ago I found a whole bunch of them being sold for $0.10 a piece so I figured hey, lets go for it. These poor little things went through a lot before they finally made it into this lovely dish you see below. I bought them, put them in the car, put them in my parents house, back in the car, to our house, into the fridge and finally into a pot. Whew! Herbed Rutabaga Mashed Potatoes
Serves 4-5 as a side dish
Ingredients
1 large rutabaga
5 potatoes of your choice
1 tbs earth balance butter
1 tsp rosemary
1 tsp Italian seasoning
1 tbs Braggs Liquid Aminos (or sea salt if you prefer)
1 tsp garlic powder
1 cup almond or soy milk
Directions
1. Boil the rutabaga and potatoes until very soft. 2. In a mixer blend together the rutabaga, potatoes, butter, and milk. 3. Mix until smooth and creamy (add more milk if needed). 4. Add the rest of the ingredients and mix until well combined.
