I asked my Facebook friends for suggestions of recipes that they love that I could challenge myself to make vegan. Of course my Mom answered the call and actually suggested one of my childhood favorites-taco pie! This comfort food is just layers upon layers of warm Americanized Mexican flavors. The additional request that was added to this was that it be made gluten free because in the original recipe the crust is made out of Pillsbury crescent rolls. Steven gave this dish a huge thumbs up and said that it was a 9 out of 10 on flavor (simply because there was no hamburger grease involved. How terrible.)
