Summer has been crazy busy for me as it probably is for most people, so I have had very little time to experiment and blog.
I began the summer at the beach with my family, sipping on coconut water and basking in the sun, which was ever so wonderful and after that I was consumed with ministry projects from sun up to sun down!
In addition to all of that I spent the summer helping Steven train for his first sprint triathlon! He did well considering he just learned to swim 6 weeks before the race. I'm so proud!
I finally got a break this week and thought I'd share this yummy recipe that I found on accident. I had a bunch of mushrooms sitting in the fridge that I wanted to use before they went bad, so not really knowing what I was going to make I just threw them in the food processor with some onion and it developed from there. The first thing I thought of when I tasted it was "Oh my goodness, this is hamburger helper!"
Servings: 2-4
Ingredients:
16 ounces white mushrooms
1 yellow onion
1 tbs lemon juice
1 tbs rice vinegar
1 tbs garlic powder
1 tbs chili powder
1/4 cup organic ketchup
Directions:
1) In a food processor combine onion and mushrooms (or you can just do one at a time)
2) Place onions in a skillet on medium-high heat (you may want to place a little water in the bottom so that it doesn't stick-I do this instead of using oil)
3) Cook until the onions and mushrooms are soft
4) Add in the rest of the ingredients and stir to combine
5) Serve over cooked rice or pasta
