Today I cracked open a can of coconut milk to use in a coconut macaroon recipe and to my surprise and delight half of the can was full of beautiful thick cream. I say surprised because none of the coconut milk that I have ever bought has had such beautiful cream. Anyway, when I saw this goodness I immediately scooped it out to make some whipped cream (which I have tried and failed at many times before). I then decided to use the cream to make this amazing recipe:
Serves 4
Ingredients (Crust):
-1/2 cup dates, soaked
-1/4 cup walnuts
-1/2 cup coconut
-2 tbs water
Ingredients (Filling):
-6 strawberries, sliced
Ingredients (Whipped Cream):
-Cream from 1 can of full fat coconut milk
-1 tbs maple syrup
Directions (Crust):
-Mix everything together in a food processor until it forms a sticky doughy mixture
Directions (Filling):
-Place the sliced strawberries on top of the crust
Directions (Whipped Cream):
-Place the maple syrup and coconut cream into a mixer and mix until light and frothy
