Pumpkin Chip Shake

A few months ago I went bargain shopping with my mom and stumbled upon a deal that now has me stocked with pumpkin! We went into my favorite discount grocery outlet (I love it because their products always change and they always have amazing deals) and I picked up a few things and headed to the checkout. When my total came to twenty something dollars, the cashier smiled and said "you get a free case of pumpkin!" Yes, that's right-not A can of pumpkin or a FEW cans of pumpkin, but a CASE of pumpkin. When my mom checked out her total came to over 40 dollars and so she got TWO free cases of canned pumpkin and though she loves pumpkin, her heart was not thrilled with the idea of two cases, so guess what? I got two free cases of pumpkin.

I know it isn't fall and I really should be focused on all the delicious fruits and veggies in the horizon, but I have pumpkin. So, here is the first installment of the saga of the free canned pumpkin:



Serves: 2-4

Ingredients:

-4 frozen bananas (peeled)
-3-4 cups of almond milk (depending on how thick you want it to be)
-1/2 cup canned pumpkin
-1 half inch piece of vanilla bean (or 1 tsp vanilla extract)
-1 1/2 tsp pumpkin spice
-2 droppers full of plain sweet drops (or 2 tbs of some other sweetener such as coconut sugar or pure maple syrup)
-2 cups of ice
-2 tbs raw cocoa nibs (or vegan/dark chocolate chips)

Directions:

1) As always, it is so easy! Throw (or place gently) all the ingredients in a blender and blend until smooth and creamy!
